In this 10 day program, from bustling Rome to the picturesque countryside, students travel across Italy to learn the history of the Italian cuisine, one of the most popular in the world.

Italian cuisine is known for its variety of tastes, and relies heavily on traditional, whole ingredients. Italy has a very diverse culinary landscape, with each area of the country having its own specialty, and due to prioritizing fresh ingredients, can vary widely across the seasons.

As part of the program, students will meet with professional chefs, tour factories and vineyards, peruse markets, and take part in multiple cooking lessons. They will learn about Rome’s Sustainable Food Program, and take a special day trip to the Tuscan countryside to visit a local farm and vineyard.

Cooking lessons include how to cook traditional Tuscan cuisine, and how to make homemade fresh pasta. Students learn in depth about producing gelato, wine, and cheese, some of most adored foods from Italy. The program will close with a traditional aperitivo and dinner experience, one of Italy’s most fun and famous culinary customs.
